I don't see why Kali can't be updated as normal other than the networking stuff being turned off, but that can be enabled and I really don't see why they turn that stuff off considering it's supposed to be a pen testing OS among other things. Kali is Ubuntu based Parrot is Debian based and it can be updated as normal. although if you look into that there are advantages for all that stuff if that's important to you.

Some people install any Linux on several partitions and some others even use different file systems on particular partitions but it's not necessary.

Some distros seem to do better if you give them at least two partitions, one of those being a "home" partition but most will run on a single partition, plus a swap partition.
